Fresh Tomato Sauce with Cheese
Ingredients
- 4 cup Tomato diced small (about 1 3/4 pound)
- 1/4 cup Extra virgin olive oil divided
- 8 cloves Garlic chopped coarsley
- 1/4 cup Fresh basil (mixed herbs basil, tyme, oregano, rosemary) chopped
- 1 tablespoon Kosher Salt
- 1 teaspoon Pepper
- 1/2 medium Red onion diced
- 1/2 medium Onion diced
- 1/2 cup Fontina cheese diced
- 8 ounce Linguine
Instructions
- - combine in medium bowl chopped tomatoes, herbs, 2 T Olive Oil, Salt and Pepper
- - Heat 2 T. Olive oil to medium-high in Dutch Oven
- - Add Onions cook about 8 min till tender crisp
- - Add garlic cook about 2 min
- - Add all remaining ingredients, heat to boil, reduce heat and simmer for 40 min or till desired consistancy (1 tablespoon tomato paste may be added to thicken the sauce if you do not have time to simmer longer then 30 min
- - Cook pasta, Drain and toss with the diced Fontina
- - portion out pasta and serve with sauce.
