Creamy Tomato Cheese Tortellini Recipe
Ingredients
- 1 lb. cheese tortellini
- 1 Tbs. Italian seasoning
- 1 Tbs marjoram
- Sprinkle of S&P
- 1 onion, diced
- 1 red or yellow bell pepper, diced
- 1 yellow squash, small dice or even grated
- 4 cloves garlic, chopped
- 2 cans diced tomatoes
- 1 8 oz. can tomato sauce (I used the rotel tomato sauce)
- 4 oz. cream cheese, softened
- More Italian seasoning if needed
- S&P to taste (again, yes, you’ll need it)
Instructions
- Cook the pasta as directed.
- Saute the onions, bell pepper, and squash in a LARGE saute pan, after a couple minutes add the seasonings, pinch of S&P and garlic.
- Stir in the diced tomatoes and the tomato sauce. Cook on a low simmer for about 15 minutes. Slowly stir in chunks of the cream cheese and cook until heated. Taste for more S&P and Italian seasoning. If you have a big enough saute pan add the cooked tortellini and mix together. If not just serve the sauce over tortellini. Hope you enjoy! :)
