Creamy Tomato Cheese Tortellini Recipe

Ingredients

  • 1 lb. cheese tortellini
  • 1 Tbs. Italian seasoning
  • 1 Tbs marjoram
  • Sprinkle of S&P
  • 1 onion, diced
  • 1 red or yellow bell pepper, diced
  • 1 yellow squash, small dice or even grated
  • 4 cloves garlic, chopped
  • 2 cans diced tomatoes
  • 1 8 oz. can tomato sauce (I used the rotel tomato sauce)
  • 4 oz. cream cheese, softened
  • More Italian seasoning if needed
  • S&P to taste (again, yes, you’ll need it)

Instructions

  1. Cook the pasta as directed.
  2. Saute the onions, bell pepper, and squash in a LARGE saute pan, after a couple minutes add the seasonings, pinch of S&P and garlic.
  3. Stir in the diced tomatoes and the tomato sauce. Cook on a low simmer for about 15 minutes. Slowly stir in chunks of the cream cheese and cook until heated. Taste for more S&P and Italian seasoning. If you have a big enough saute pan add the cooked tortellini and mix together. If not just serve the sauce over tortellini. Hope you enjoy! :)
