Mac N Cheese

Ingredients

  • 6 oz Elbow Macaroni Noodles 180 Grams
  • 1/2 tsp Salt for Macaroni water
  • 3 TBS Butter
  • 3 TBS Flour
  • 1 1/2 cups Milk or one can of Evaporated Milk
  • 1/2 tsp Pepper
  • 1 tsp Hot Sauce or 1/4 tsp red pepper flakes
  • 3 oz Sharp Cheddar cheese 90 grams, Grated
  • 3 oz Colby Jack cheese 90 grams, Grated
  • 1/4 cup Bread crumbs
  • 2 TBS Butter melted

Instructions

  1. Mix all the cheeses together and set aside
  2. Cook the Noodles to al dente according directions on package, drain and set aside
  3. Melt butter in large saucepan
  4. Add flour and mix constantly to create a Roux.
  5. (if using Evaporated milk, there is no need to use the butter/flour to make a roux)
  6. Slowly add milk stirring constantly.
  7. Bring to a boil on med high heat.
  8. Add pepper and hot sauce
  9. Once milk starts to thicken add the cheeses.
  10. Stir until all the cheese is melted.
  11. Remove from heat.
  12. Mix in the noodles till well blended
  13. You could eat just like this or:
  14. Put into an oven safe 6X9 dish. Cover with either more grated cheese or butter/bread crumb mixture.
  15. Place into a preheated 375 degree oven and bake for 25 minutes or until top is brown and cheese is bubbling.
