Spiced up 4 Cheese Lasagna

Ingredients

  • 2 cans tomato sauce
  • 1 can tomato paste
  • 1 can mushrooms pieces and stems
  • 1/4 cup of each frozen corn/orange peppers optional
  • 1 tsp dried minced garlic
  • 1/2 tsp oregano
  • 1/2 tsp crushed red pepper
  • 1 tsp cumin
  • 1 tsp parsley
  • 2 tsp chili powder
  • 3/4 + 1/4 cup parmesan (save 1/4 cup for topping)
  • 1 cup ricotta cheese
  • 1 cup cottage cheese
  • 1 1/2 + 1/2 cups grated mozzarella (save 1/2 cup for topping)
  • 1 egg
  • 1/2 package lasagna noodles (about 12 noodles)
  • 1 pound ground beef

Instructions

  1. Meat Sauce:
  2. In a large saucepan, combine tomato sauce, tomato paste, mushrooms and spices, keep simmering on minimum heat. Add onions/peppers/frozen corn if desired.
  3. In a large frying pan, cook ground beef until brown.
  4. Add ground beef to tomato sauce and continue simmering on low heat.
  5. Boil approx 5L of water and add lasagna noodles, boiling for approx 10 min.
  6. Preheat oven to 350 degrees.
  7. While noodles are boiling, begin Cheese mixture:
  8. In large bowl, combine:
  9. 3/4 cup parmesan,
  10. 1 cup ricotta,
  11. 1 cup cottage cheese
  12. 1 1/2 cups mozzarella
  13. Beat egg and mix into cheese mixture.
  14. In a small bowl combine:
  15. 1/4 cup parmesan
  16. 1/2 cup mozzarella
  17. Rinse cooked noodles in strainer under hot water
  18. In a 9X13 baking dish, layer as follows:
  19. 1. layer of meat sauce
  20. 2. layer of noodles
  21. 3.layer of large bowl cheese mixture.
  22. repeat until pan is full or mixture is used up, final layer will be a layer of meat sauce.
  23. once complete, cover lasagna evenly with smaller bowl cheese mixture
  24. cover dish in tinfoil and bake for 45 minutes.
