Sweet Corn Grilled Cheese with Smoked Gouda, Scallions and Chili Butter

Ingredients

  • 4 tablespoons butter room temp
  • 1 teaspoon chili powder
  • 1 pinch cayenne pepper
  • 8 slices sourdough bread
  • 8 ounces smoked gouda or smoked cheddar
  • 1/4 cup cooked corn
  • 2 tablespoons chopped scallions

Instructions

  1. Step 1
  2. In a small bowl mix the butter, chile powder, and cayenne pepper until they’re well combined.
  3. Step 2
  4. For each sandwich: Spread chile butter on two slices of bread to flavor the outside of the sandwich. Flip over one slice of bread and top it with cheese, corn, scallions, and more cheese. Close the sandwich with the other slice of bread, buttered side up.
  5. Step 3
  6. Grill two panini at a time, with the lid closed, until the cheese is melted and the bread is toasted, 4 to 5 minutes.
