The Ultimate Grilled Cheese with Tomato

Ingredients

  • 8 slices brioche-style white bread
  • 4 tbsp. mayonnaise
  • 8 oz. Fontina cheese, sliced
  • 2 large tomatoes, cut into 8 slices
  • Kosher salt and freshly ground black pepper
  • 2 tbsp. unsalted butter

Instructions

  1. Lay bread on a work surface and spread 1/2 tablespoon mayonnaise on each. Turn 4 slices over and top with fontina and tomato, dividing evenly. Season with salt and pepper. Top with remaining bread slices, mayonnaise sides up.
  2. Melt 1 tablespoon butter in a large skillet or cast-iron pan over medium heat. Cook sandwiches, in two batches (adding an additional tablespoon of butter for second batch), turning once, until cheese is melted and bread is golden brown, 4 to 6 minutes. Serve immediately.
