The Ultimate Grilled Cheese with Tomato
Ingredients
- 8 slices brioche-style white bread
- 4 tbsp. mayonnaise
- 8 oz. Fontina cheese, sliced
- 2 large tomatoes, cut into 8 slices
- Kosher salt and freshly ground black pepper
- 2 tbsp. unsalted butter
Instructions
- Lay bread on a work surface and spread 1/2 tablespoon mayonnaise on each. Turn 4 slices over and top with fontina and tomato, dividing evenly. Season with salt and pepper. Top with remaining bread slices, mayonnaise sides up.
- Melt 1 tablespoon butter in a large skillet or cast-iron pan over medium heat. Cook sandwiches, in two batches (adding an additional tablespoon of butter for second batch), turning once, until cheese is melted and bread is golden brown, 4 to 6 minutes. Serve immediately.
