Cheese Chile Appetizer

Ingredients

  • 1/2 cup butter melted
  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 1 lb. grated jack cheese
  • 1 1/2 can (8oz) Ortega diced chile
  • 1 pint cottage cheese
  • 10 each eggs, beaten
  • 1 pinch salt to taste
  • 1 pinch garlic powder to taste

Instructions

  1. PLACE MELTED BUTTER IN A 13x9x2 INCH PYREX. LIGHTLY BEAT EGGS IN A LARGE BOWL. ADD FLOUR, BAKING POWDER, SALT, AND GARLIC POWDER TO LIGHTLY BEATEN EGGS. BLEND WELL WITH A SPOON AND POUR IN THE MELTED BUTTER. ADD CHILES, COTTAGE CHEESE, AND JACK CHEESE AND MIX WELL UNTIL BLENDED. TURN THIS MIXTURE INTO THE PYREX AND BAKE @ 400 DEGREES FOR 15 MINUTES. REDUCE HEAT TO 350 AND BAKE FOR 35-40 MINUTES MORE. CUT INTO SMALL SQUARES AND SERVE HOT. TO FREEZE, CUT INTO OBLONG PIECES, WRAP IN FOIL, AND FREEZE. CUT INTO SQUARES JUST BEFORE FULLY DEFROSTED, HEAT, AND SERVE.
